Summer is in full swing, and I love exploring new meal ideas during this time of year.
I did some research, and picked some AWESOME breakfast, lunch, dinner and snack ideas to share with you all! I’ve also included the original website link to each recipe, which you’ll find next to each recipe title.
Feel free to leave a comment on this post to let me know if you tried any of the recipes, or to include your own great summer meal suggestions!
BREAKFAST
Open-Faced Smoked Salmon Tea Sandwiches (Shape)
What a power breakfast! With the protein from the salmon, good fats from the avocado and healthy carbs from the whole grains, this quick breakfast will keep you full and energized until lunch time.
LUNCH
Sriracha-Lime Chicken Chopped Salad (Lexi’s Clean Kitchen)
My favorite part of this salad (besides the fact that it contains so many nutritious elements) is how much flavor is packed into each bite–from the slightly spicy chicken, to the sweet pineapple and creamy avocado, to the tart dressing. It’s also an easy lunch for those on the go; simply prepare the night before work and take it with you in the morning. Just be sure to pack the dressing in a separate container so your meal won’t be soggy.
BONUS: I found this really great list of healthy, easy lunches from BuzzFeed. It contains everything from vegetarian options, to salads, to sandwiches. Click here to see the list.
DINNER
Turkey and Pepper Tacos (The Culinary Chronicles)
I just love a good taco night during the summer, so I wanted to include a healthy twist for your Taco Tuesdays. The recipe calls for loads of spices and some fresh ingredients, so you aren’t sacrificing flavor in place of nutrition. I would like to try swapping the turkey for chicken sometime, or putting the filling in a romaine lettuce “shell.” The options are endless!
SNACK
Peach Mango Smoothie (MyRecipes)
Who doesn’t love a sweet, cold, tropical treat during a hot day? This refreshing smoothie is only 184 calories, is super easy to make and includes only a few ingredients. YUM!
Watermelon Feta Skewers (Health)
We all love snack foods, so I couldn’t resist including another option (especially because watermelon, feta and mint makes such a delish combo). You could even skip the skewers and toss together in a bowl with some balsamic vinegar for a refreshing side dish.
Hope you enjoyed these recipe ideas and you’re inspired to try one or two of them. As I mentioned before, feel free to share your ideas in the comment section; I’d love to see them. Next week, be sure to look for a “Summertime Fun & Reruns” video from the archives on our screened-in porch at Cypress. It’s one of our summer favorites!
